Achari Aaloo (Pickle flavoured Potato)



Yummy...Mouthwatering "Achari Aaloo (Pickle flavoured Potato)"
Recipe to prepare the dish:

Ingredients:
1. partly boiled baby potatoes - 200 gms
2. vegetable or olive oil - 1 table spoon
3. fenugreek seeds -1/4 tea spoon
4. mustard seeds - 1/2 tea spoon
5. coriander seeds - 1/2 tea spoon
6. black caraway (onion seeds) - 1/2 tea spoon
7. aniseeds - 1 tea spoon
8. coriander powder - 1/2 tea spoon
9. turmeric powder - 1/4 tea spoon
10. red chilly powder - 1/2 tea spoon
11. salt - to taste
12. coriander leaves (for garnish) - 2 or 3 stalks

Steps:
1. remove skin of partly boiled baby potatoes
2. pour 1 table spoon vegetable or olive oil in a deep frying or a shallow pan
3. heat it on medium flame for 1-2 minutes
4. put all the seed ingredients one by one:
a) 1/4 tea spoon fenugreek seeds 
b) 1/2 tea spoon mustard seeds
c) 1 tea spoon aniseeds
d) 1/2 tea spoon black caraway (onion) seeds
e) 1/2 tea spoon crushed coriander seeds
5. toss all the seeds
6. put the potatoes, and toss them well with the seeds 
7. sprinkle 1/4 tea spoon turmeric powder
8. put 1/2 tea spoon coriander powder
9. use 1/2 tea spoon red chilly powder
10. sprinkle salt to your taste
11. mix all the ingredients properly until the potatoes get golden color
12. pour little water, and cover the pan
13. leave it on for only 1-2 minutes; so that the water dries, and the potatoes become tender
14. remove the cover, and sprinkle some chopped coriander leaves for garnish
