Garam Masala (Seasoning)



"Garam Masala (Seasoning)" is a blend of various dry-roasted ground spices.
It is used to enhance the flavour of food.
Let's quickly learn to prepare "Garam Masala (Seasoning)"

Ingredients:
1. cumin seeds - 2 table spoons
2. coriander seeds - 2 table spoons
3. dry red chilly - 4
4. brown cardamom - 2
5. clove - 6 buds
6. star anise - 3 small pieces
7. cinnamon - 5-6 medium pieces
8. bay leaves - 2
9. stone flower - 1/4 tea spoon
10. aniseeds - 1 tea spoon

Steps:
1. place a deep frying or a shallow pan on medium flame
2. put 2 table spoons cumin seeds
3. add 2 table spoons coriander seeds
4. roast both the ingredients for a minute
5. add the remaining ingredients one by one:
a) 4 dry red chillies
b) 6 buds of clove
c) 2 brown cardomons
d) 3 small pieces of star anise
e) 5-6 medium pieces of cinnamon
f) 2 bay leaves
g) 1/4 tea spoon stone flower
h) 1 tea spoon aniseeds
6. keep tossing the mixture on low flame, for a few minutes
7. once its color changes, and it gives out the strong aroma; put the mixture aside
8. allow it to cool to room temperature 
9. grind the mixture into fine powder
10. store it in an air-tight container
