Recipe to prepare "Lahori Baingan Bharta":
1. cooking oil - 4 table spoons
2. Brinjal/Eggplant (medium slices) - 1 large size
3. garlic - 7-8 cloves
4. salt - to taste
5. red chilly powder - 1-1/2 tea spoon
6. onion (finely chopped) - 2 medium bulblets
7. ginger (grated) - 1/4 inch
8. turmeric powder - 1/2 tea spoon
9. tomato (finely chopped) - 3 medium size
10. green chilly (roasted) - 3-4
Procedure:
1. heat 2 table spoons cooking oil in a pan (on medium flame)
2. fry medium slices of eggplant (1 large size) to get a brown coating
3. sprinkle little salt
4. add 1/2 tea spoon red chilly powder
5. toss the slices well, and cook them for 2-3 minutes
6. take the slices off the pan, and let them cool to room temperature
7. in the same pan, fry 7-8 garlic cloves, and allow them to cool to room temperature
8. mash the eggplant slices and garlic cloves together
9. heat 2 table spoons cooking oil in a pan
10. fry finely chopped onion (2 medium bulblets)
11. add grated ginger (1/4 inch)
12. stir the ingredients well
13. add 1/2 tea spoon turmeric powder
14. add 1 tea spoon red chilly powder
15. add finely chopped tomato (3 medium size)
16. add salt (to taste)
17. toss the dish properly, and allow it to cook for few minutes
18. add the mashed mixture of eggplant and garlic
19. stir it for few minutes on medium flame
20. for garnishing, roast 3-4 green chillies on flame
21. put the flame off
22. garnish the dish with roasted green chillies
