Recipe to prepare "Kolaveri Masala" - an intense dish:
Ingredients:
1. cooking oil - 1 table spoon
2. onion (finely chopped) - 2 medium bulblets
3. ginger (paste) - 1 inch
4. garlic (paste) - 4 or 5 cloves
5. turmeric powder - 1/4 tea spoon
6. cumin powder - 1/2 tea spoon
7. coriander powder - 1 tea spoon
8. seasoning (garam masala) - 1/2 tea spoon
9. water - 1/4 small cup
10. red chilly powder - 1/2 tea spoon
11. tomato (chopped) - 2 medium size
12. salt - to taste
13. cottage cheese - 200 gms
14. dry fenugreek (crushed) (kasoori methi) - 1/2 tea spoon
15. milk - 1 small cup
Note: For Kolaveri ingredient-
1. take 200 gms cottage cheese (paneer)
2. deep fry until it turns brown
3. let it cool to room temperature
4. crush the content
Procedure:
1. heat 1 table spoon cooking oil in a pan
2. fry chopped onion (2 medium bulblets)
3. add the following ingredients:
a. 1-1/2 tea spoon garlic paste (or 4-5 cloves grated)
b. 1/2 tea spoon ginger paste (or 1 inch grated)
c. 1/4 tea spoon turmeric powder
d. 1/2 tea spoon cumin powder
e. 1 tea spoon coriander powder
f. 1/2 tea spoon seasoning (garam masala)
g. 1/4 small cup water
h. 1/2 tea spoon red chilly powder
4. stir all the ingredients well
5. add chopped tomatoes (2 medium size)
6. add salt (to taste)
7. toss the dish and let it cook properly
8. add the Kolaveri ingredient
9. mix it well
10. add 1 tea spoon dry fenugreek (crushed) (kasoori methi)
11. add 1 small cup milk
12. stir it properly for approx. 2 minutes
13. put off the flame, and serve it
