Recipe to prepare "Paneer Pahadi Masala" - Cuisine of the Hills:
Ingredients:
1.cooking or refined oil - 1 table spoon
2. cinnamon -1 inch
3. black cardamon - 2
4. bay leaves - 2
5. dried (whole) red chillies - 2
6. cumin seeds - 1 tea spoon
7. cardamon - 1
8. stone flower - 1
9. shaahi jeera (cumin) - 1/2 tea spoon
10. poppy seeds - 1/2 table spoon
11. coriander seeds - 1/2 tea spoon
12. garlic (peeled) - 10 cloves
13. ginger (diced) - 1/2 inch
14. onion - 2 medium size
15. turmeric - 1/2 tea spoon
16. red (kashmiri) chilly powder - 1 tea spoon
17. coriander powder - 1 tea spoon
18. coriander leaves - 1 stalk
19. cottage cheese cubes (paneer) - 200 gms
20. salt - to taste
21. water - 1/2 small cup
Steps:
1. put 1 tea spoon cooking or refined oil in a pan
2. spread it evenly on the pan
3. add the following ingredients:
a. 1 inch cinnamon
b. 2 black cardamon
c. 2 bay leaves
d. 2 dried (whole) red chillies
e. 1 tea spoon cumin seeds
f. 1 cardamon
g. 1 stone flower
h. 1/2 tea spoon shaahi jeera (cumin)
i. 1/2 table spoon poppy seeds
j. 1/2 tea spoon coriander seeds
k. 10 (peeled) garlic cloves
l. 1/2 inch ginger (diced)
m. 1 medium onion (diced)
4. toss all the ingredients well
5. let the mixture cook for 2-3 mins
6. put off the flame
7. add the other ingredients:
a. 1/2 tea spoon turmeric
b. 1 tea spoon red (kashmiri) chilly powder
c. 1 tea spoon coriander powder
8. toss the content again
9. let it cool to room temperature
10. blend it in a mixer to get a thick paste
11. heat 1 table spoon cooking or refined oil in a pan
12. add 1 medium size onion (chopped)
13. fry it, until it turns light brown
14. add the (pahadi masala) paste prepared earlier
15. mix it well with the fried onion
16. cover the pan for 30 secs to 1 min.
17. uncover, and add 200 gms cottage cheese cubes (paneer)
18. toss the cubes carefully
19. add salt to your taste
20. put little water, and again cover the pan
21. cook the dish for 2-3 mins
22. garnish it with coriander leaves & serve
