Recipe to prepare "Sabz-e-Uttarakhand" - Cuisine of Uttarakhand:
Ingredients:
2. garlic (finely chopped) - 4 cloves
3. dried (whole) red chilly - 3
4. onion (chopped) - 1 medium bulblet
5. salt - to taste
6. turmeric - 1/4 tea spoon
7. coriander powder - 1/2 tea spoon
8. tomato (chopped) - 1 medium size
9. sprouted & blanched lentil (moong dal)
10. mint (pudina) chutney - 3 or 4 table spoons
11. lime juice - 1/2 tea spoon
12. chaat masala - 2 pinches
13. coriander leaves - 1 stalk
Note: Mint (pudina) chutney here, is prepared by using a strainer or blender to get a paste of-
a. coriander leaves - 1 medium bunch
b. mint (pudina) leaves - 1 medium bunch
c. green chilly - 5
d. ginger - 1 small piece
e. salt - 1/2 tea spoon
Procedure:
1. heat 1-1/2 table spoon cooking oil
2. fry 4 garlic cloves (finely chopped)
3. add 3 dried (whole) red chillies (medium pieces)
4. add 1 medium onion (chopped)
5. toss the ingredients well
6. add the following ingredients:
a. 1/4 tea spoon turmeric
b. 1/2 tea spoon coriander powder
c. 1 medium tomato (chopped)
7. toss the content well
8. add sprouted & blanched lentil (moong dal)
9. add 1 tea spoon salt
10. let the dish cook for 2 minutes
11. add 3-4 table spoons of mint (pudina) chutney
12. blend it well with the dish
13. add 1/2 tea spoon lime juice
14. add 2 pinches chaat masala
15. put off the flame, and garnish it with coriander leaves
